Melomakarona ~
Traditional Christmas Cookies

Ingredients:
• 2 cup FeleaGoods® Extra Virgin Olive Oil
• 1 cup sugar
• 3/4 cups orange juice
• 1/4 cup brandy
• 2 tsp orange zest
• 2 tsp baking powder
• 1 tsp baking soda
• 8 cups all purpose flour (more or less)
For the syrup:
• 2 cups FeleaGoods® Honey
• 2 cups sugar
• 2 cups water
Garnish:
• 1/2 cup walnuts
• 1 tsp cinnamon
• 1/2 tsp clove
Preparing & Cooking :

In a large bowl mix the olive oil with sugar, orange juice, zest and brandy.

In another bowl sift flour and mix the baking soda. Add gradually to the olive oil mixture stirring with a wooden spoon. Knead the dough lightly

Form into the desired shape and bake in a preheated oven at 350°F for about 30 minutes until they are golden brown.

Boil the syrup for 5 minutes, skim off the foam and pour the syrup over the melomakarona as soon as you take them out of the oven.

When they have absorbed the syrup, turn them over to allow it to be absorbed on both sides.

Set them aside to cool thoroughly.

Mix the walnuts, cinnamon and clove and sprinkle over the melomakarona
