Traditional Cretan Omelet with Zucchini

Cretan omelet only consist of products from the Cretan soil, it’s a dish purely unique and delicious.

Ingredients:
• 1 zucchini, finely sliced

• 1 sliced tomato

• 2 sliced onions

• 2 potatoes

• 4 eggs

• 2 green or red peppers, finely sliced,

• 1/4 cup of feta cheese

• FeleaGoods® Extra Virgin Olive Oil

• oregano or thyme, salt and pepper

• 2 cups spinach.

Cook:

  1. In a bowl whisk the eggs together with some feta cheese and keep aside.translucent.

  2. Add the tomato, salt and pepper, and cook for 4-5 minutes.

  3. Add the egg and cook on low to medium heat for 8-10 minutes, or until desired doneness.

  4. Sprinkle with some oregano or thyme.

  5. Heat olive oil in a frying pan and add the onions, the zucchini, potatoes, peppers and spinach, and cook until onions are translucent.

  6. Add the tomato, salt and pepper, and cook for 4-5 minutes

  7. Add the egg and cook on low to medium heat for 8-10 minutes, or until desired doneness.

  8. Sprinkle with some oregano or thyme.
